Combining the sweet flavor of rum, the rich, floral taste of sweet vermouth, and the nutty, apricot taste of apricot brandy, along with lemon juice and a splash of grenadine make this apricot pie martini one delicious cocktail.
Today is pi day and I saw this apricot pie martini recipe a few months ago in the Playboy Bartenders Guide by Marlo Thomas and I just knew I had to make this cocktail for March 14th (pi day- 3.14). Plus I have a whole bottle of apricot brandy sitting in a cabinet from when I made this apricot moscow mule and I’ve been racking my brain with what else I can make with it. So here we are. I also can’t stop making cocktails from the Playboy Bartenders guide. It just has so many interesting drinks in it that I have a whole list and every few months peruse the book again and pick out more drinks to try.
So I may have mentioned this before, I’m an award winning pie baker. I have several blue ribbons from my local county fair and I even got to enter my apple pie in the Pennsylvania State farm show where it made the top 25. I make all kinds of pies but I have actually never made an apricot pie. So I couldn’t actually say whether this martini tastes like apricot pie but I can taste apricots from the brandy. And it’s very delicious.
Apricot pie martini
(serves 1)
1 1/2 ounce light rum
1/2 ounce sweet vermouth
1 ounce apricot brandy
1 teaspoon lemon juice
1/4 teaspoon grenadine
piece of orange or lemon peel twist for garnish, optional
In a cocktail shaker with ice, combine rum, vermouth, apricot brandy, lemon juice, and grenadine. Shake well. Strain into a martini glass (or any glass). Garnish with a citrus twist-optional.
