Apricot, whipped feta, and pistachio bites

I’m sharing some snacks with you today! After all, my tagline is “good drinks, good food, and good time with family and friends!” So here’s some good food for you.

These tasty little “bites” are super simple and easy to throw together. You can prep the whipped feta and chop the pistachios ahead of time. It all comes together pretty quickly. I like the how the sweet, salty, crunchy, savory flavors all combine in one small bite.

Apricot, whipped feta, and pistachio bites

6oz cream cheese, room temp

2oz crumbled feta cheese

15-18 dried apricots

1/4 cup pistachios, chopped

honey for drizzling

In a food processor, combine cream cheese and feta cheese and pulse until cheeses are mixed. Place dried apricots on a plate or platter and top with a dollop of whipped feta. Sprinkle chopped pistachios over top and then drizzle with honey.
