This delicious Caribbean mule has all of your favorite summer flavors- 2 kinds of rum, pineapple juice, triple sec, and of course lime juice and ginger beer.
I’m on a bit of a caribbean kick this summer. First my caribbean martini, then my caribbean protein shake, and now this caribbean mule. Am I dreaming of the caribbean? Am I trying to send Mike subliminal messages about going to the Caribbean? Or am I trying to get my bestest friend pumped up for her vacation to the Caribbean in November? Probably yes to all the above.
So I’ve realized that I’m very particular when it comes to the ginger beer I use in my mules. I do not like the “spicier” ginger beers. I like the milder ones. It makes a huge difference for me in the taste because I feel like the ginger beer can overpower the drink sometimes. I found a really good ginger beer for this one (Stoli ginger beer) and I feel like it really complimented the other ingredients. This is just my opinion of course. You do you. But you should definitely do this caribbean mule because it’s fantastic.

Caribbean mule
(serves 1)
1 1/2 ounce light rum
1 ounce dark rum
1/2 ounce triple sec
1/2 ounce lime juice
2 ounce pineapple juice
3 ounce ginger beer
1 cup ice
Lime slice or wedge, optional
pineapple slice or wedge, optional
In a shaker with ice, add light rum, dark rum, triple sec, lime juice, and pineapple juice. Shake well. Pour into a glass (or copper mug if you have one), adding more ice if needed depending on the size of your glass/mug. Top with ginger beer. Give it a light stir and garnish with a lime and pineapple slice, optional.
