Need more veggies in your life? Want to be like the Easter bunny? Looking for a refreshing and pretty spring cocktail? Love a Moscow mule and like to try different flavors? Well, I’ve got you covered with this very tasty and “healthy” carrot moscow mule.
I was a little bit leery of this drink. I can’t say that I had ever tried carrot juice. But it tastes just like you think it would. Like carrots. However it’s not an overpowering taste. When combined with the ingredients for a moscow mule, you get a very light, refreshing taste. As it turns out, carrots pair really well with ginger and they also pair well with lime juice. Conversely, I learned something new in that carrots and lime juice are often used in Indian cuisine (just a little fun fact). Additionally, carrots go well with mint as well so I used some mint for garnish.
Ingredients for carrot moscow mule
Vodka
Carrot juice- I used 100% carrot juice
Lime juice- fresh squeezed, plus a lime wedge for garnish
Ginger beer- your preference on brand. I really like stoli. They make a decent vodka and a decent ginger beer to go with your moscow mule. Good marketing on their part.
Sprig of mint- for garnish, optional
Recipe
Carrot moscow mule
(serves 1)
2 ounces vodka
1/2 lime, juiced
2 ounces carrot juice
Ginger beer- amount depends on your glass, I usually use about 4 ounces
Lime wedge, optional
Mint sprig, optional
In a cocktail shaker with ice, combine vodka, carrot juice, and lime juice. Shake well. Pour into a glass or copper mug. Top with ginger beer. Garnish with a lime wedge/wheel and mint sprig (optional).
