Is it karaoke night? No. Have I lost my mind? Perhaps. Am I drunk? Maybe. No, for real. This cocktail reminds me of an orange creamsicle that I used to always get from the ice cream man when I was a little kid. Then the song by Van Halen would not stop popping in my head, so now I’m passing it on to you.
So I was either all about an orange creamsicle or it was a chocolate scooter crunch. Or chocolate éclair as it was sometime called even though it was nothing like an éclair. At least in my 8 year old brain. And no thank you to a strawberry scooter crunch. Chocolate only. And only an orange creamsicle. No raspberry as they sometimes offered.
Since coconut and coconut milk is all the rage right now, and because I’m completely obsessed with using fresh squeezed orange juice, I made us this magnificent little cocktail that is totally reminiscent of one of my favorite treats from the ice cream man during my childhood.
Coconut creamsicle cocktail
1 oz orange vodka
1 oz coconut rum
1 1/2 oz fresh squeezed orange juice
2 oz coconut milk
In a cocktail shaker filled halfway with ice, shake all ingredients and pour into a glass. Garnish with an orange wedge optional.
Hey, let’s drink 3 of these and go sing karaoke!!! Actually I much prefer a sing-a-long piano bar instead because I cannot carry a tune in a bucket. And I still know I cannot sing at all even when I’m drunk. Being a bartender, I’ve met waaayy too many people that believe they can.
