Crisp, tart, and refreshing. This coffee rum cooler is the perfect dog days of summer drink to cool you off and give you a nice little buzz.
I found this cocktail in a book ” Playboy Bartender’s Guide.” It’s from the 1970’s. It contains some really neat recipes. Like this California lemonade, Freddy fudpucker, and Caribbean martini. When I saw this cocktail I was intrigued. Usually when I read a recipe, I can get an idea of what it’s going to taste like. But for this drink I was kind of baffled. First of all, there isn’t any coffee in it, just coffee liqueur. Plus dark rum, lime juice, and club soda.
It looks like a cuba libre which is rum, cola, and lime juice. But instead of cola it’s coffee liqueur and club soda. It also looks like and reminds me of the Tik Tok “healthy coke” which is balsamic vinegar and any flavor of sparkling water. It looks like a coke but doesn’t taste anything like a coke. To be honest, I never tried it. I’m just taking most peoples word for it. A part of me still kind of wants to try it though. I’ll let you know if I ever do. Or let me know if you ever have.
So anywho, back to my coffee rum cooler. It’s not sweet at all. You can definitely taste the rum and lime juice with just a hint of the coffee liqueur which gives it a whole different taste. Refreshing is the word I keep wanting to use to describe it.
Coffee rum cooler
(serves 1)
1 1/2 oz dark Jamaican rum
1 oz coffee liqueur
1/2 oz lime juice
club soda
slice of lime
Fill a highball glass with ice and add 1st three ingredients. Stir gently. Top with club soda. Stir gently again. Add a lime slice for garnish (optional). I also added a sprig of mint just to make my photos look pretty.
