This delicious spiked iced coffee is a perfect treat for St. Patrick’s day or any day of the year. It is so tasty and very strong because it’s made with 3 different kinds of alcohol. Irish whiskey, Irish cream, and Guinness plus coffee and a little bit of sweetener. Even if you’re not Irish, after drinking one of these you’ll think that you are.

So there’s a little trick to making this drink. You have to mix some of the ingredients in a shaker and then pour in the beer and lastly you pour in the irish cream and it gives you this neat swirly effect. Well let me tell you how fun that is to try and create and then hurry up and photograph. Ha! As you can see I was only semi successful. Plus I was trying to do this on an afternoon my son was home and he kept photobombing my pics trying to grab a piece of ice off of my props. But let me tell you, the “swirly” effect or whatever you want to call it does not affect the taste at all.

The taste is very much like an iced coffee with Bailey’s (Irish Cream) but with a little bit more of a kick which comes from the Guinness. It’s also essentially an Irish car bomb shot with coffee and maple syrup added in. An Irish car bomb shot is a tall glass filled halfway with Guinness and then you drop in a shot glass of Irish cream with a floater of Irish whiskey on top and then drink the whole thing. This used to be one of my favorite shots back in the day. I also used to make quite a few of these when I was a bartender and worked our St. Patrick’s day party.

Wikipedia is telling me that a less offensive name for an Irish car bomb shot is a Dublin drop, an Irish bomb, or an Irish slammer. Ok thank-you.

Some of the recipes for a Dublin iced coffee that I’ve seen use coffee, Guinness, Irish whiskey, a simple syrup, and heavy cream. I decided against a simple syrup and opted for maple syrup instead. I also opted for more liquor and used Irish cream instead of heavy cream. Does that make this healthier? Ya right, I know.

Dublin iced coffee

(serves 1)

4 oz coffee, cold brew coffee or cooled off coffee

2 1/2 oz Guinness

1/2 oz pure maple syrup

1 oz Irish whiskey

1 oz Irish cream

Fill a tall glass 3/4 full with ice and add coffee. In a shaker with a small amount of ice, add Irish whiskey and maple syrup. Shake well then pour into glass. Add Guinness. Then pour Irish whiskey over top. Enjoy!
