Inspired by the hummingbird cake, this delicious cocktail is fruity and sweet (but not too sweet) and the cinnamon sugar around the rim just tops it off perfectly.
Anybody that knows me, knows that I absolutely LOVE Martha Stewart. And everything and all things Martha Stewart. Years ago I worked as an xray tech at an outpatient office with 5 other girls. We would always celebrate each others birthdays by ordering lunch, pitching in for a nice gift, and having cake. So one year one of my coworkers decided to make a cake for my birthday and she chose Martha Stewart’s Hummingbird cake. It was delicious and beautiful. She even sliced and dried the pineapple to decorate the cake just like Martha. It was so awesome!
A hummingbird cake consists of banana, pineapple, coconut, walnuts, and cinnamon plus your regular cake ingredients- flour, eggs, sugar, etc… For this cocktail I used the flavors of banana, pineapple, and coconut and then put cinnamon sugar around the rim of the glass. Which I just love to do when I drink a pumpkin beer and a few other cocktails.
Recipe for hummingbird cocktail
Hummingbird cocktail
(serves 1)
2 ounces coconut rum
1/2 ounce banana liqueur
3 ounces pineapple juice
cinnamon sugar- about 1/2 teaspoon of each
Rim your glass with cinnamon sugar by placing the cinnamon sugar mixture onto a plate. Take a piece of fruit such as a lemon wedge and rub it around the rim of the glass. Dip the rim into the plate and set aside. In a shaker with ice, add rum, banana liqueur, and pineapple juice. Shake vigorously and pour into glass.
Have your cake and drink it too!
