A tasty little martini that’s like a dessert but not too sweet!
I had this cocktail in my phone for like 2 years. I think I saw it at a restaurant and it was called an Italian wedding cake cocktail or martini or something. I had the list of ingredients in my memos but not the measurements. So one day about a year ago I tested it and came up with this martini. Then I named it after these cute little cupcakes (I bought and didn’t make) because I didn’t want to foreshadow anything by calling it a wedding cake martini. Fast forward another year, and as I’m writing this post, I had to go and make this martini again because I forgot how it tasted. I could only remember that it was very good. And it sure is! The amaretto is what makes it “Italian” and the vanilla vodka and crème de cocoa give it the cupcake flavor. The pineapple and cranberry give it a very mild flavor. Put it all together and it’s quite the tasty martini. A perfect dessert martini. You could probably also use cake vodka instead of vanilla vodka but I like the combination of vanilla vodka with the crème de cocoa.
Italian cupcake cake martini (serves 1)
1 oz vanilla vodka
1 oz amaretto
1/2 oz crème de cocoa
1oz pineapple juice
1oz cranberry juice
Place all ingredients in a shaker with ice. Shake well and strain into a martini glass.
