I’m not a big fan of grapefruit. But I saw an old episode of Brunch at Bobby’s and he made a version of a grapefruit mojito that had a ginger and grapefruit simple syrup that I thought sounded really tasty. So I decided to try my own version and just made a ginger simple syrup and also made my drink non alcoholic.

The ginger simple syrup was really easy to make. It’s just sugar, water, and 2 pieces of fresh ginger. You bring that to a simmer and let it cool then strain out the 2 pieces of ginger. It gives the simple syrup such a nice flavor and isn’t too overpowering.

A mojito is a traditional Cuban drink consisting of 5 ingredients- white rum, sugar, lime juice, club soda, and mint. To make a flavored mojito, you add fresh fruit- like these grapefruit segments- to the glass and you muddle the fruit with the sugar and lime juice, or in this case, the simple syrup. Now for my grapefruit mojito I obviously omitted the alcohol but you could always add white rum. In the Brunch at Bobby’s episode, he used rum and a sparkling rose wine.

To muddle the fruit at the bottom of the glass, you need a special tool called a “muddler.” If you don’t have a muddler you can always use the end of a wooden spoon.

Non alcoholic grapefruit mojito

(serves 1)

5 grapefruit segments

5 mint leaves

1 ounce ginger simple syrup *

1/2 lime, juiced

1 can grapefruit sparkling water

ice

In a tall glass, muddle grapefruit, mint leaves, lime juice, and ginger simple syrup. Add ice and fill glass with grapefruit sparkling water.

For ginger simple syrup- in a small saucepan over medium heat, combine 1/2 cup water and 1/2 cup sugar and stir until dissolved. Add two 2 inch pieces of peeled fresh ginger. Bring to a simmer. Let simmer for about 2-3 minutes. Remove from heat and let cool. Discard the ginger pieces. Store in an air tight container in the refrigerator for about 1 month.
