Normally this time of year I would be in super stressed out mode. I would bake and sell pies for Thanksgiving. So in the weeks leading up to Thanksgiving I would be frantically making batches of pie dough every.single.day. Then I would also be scrambling for the final pie count and putting together the massive shopping list and going around to about 3 different stores trying to get the best prices and praying that they have all of the ingredients I need. Because like one year I had to find someone to special order rhubarb for me. At like $8 a pound. Or the time my favorite grocery store in all the land-Aldi- didn’t have red raspberries. Then I would also be planning my pie prep party for the sunday night before thanksgiving because the baking madness would start at 5 am Monday morning. It was just a way for me to sucker in my friends and family to help me put together pie boxes and do a few other things to help get me ready for 3 days of non stop pie baking. The most pies I ever made was 140.
This pic is of the 4th pie of 140 on the first day of baking. Ugh! I cried. Luckily for my helpers that day, they nibbled on the dropped pie as I had them peel apples for me.
Sooooo, I must admit it feels really weird not to be making and selling pies this year. The actual baking days were very long and a lot of work but those will be the days I’ll miss out of the whole crazy process. In light of the fact I’m not baking pies this year, I made us a pie cocktail instead. A pumpkin pie martini. When I make pumpkin pies, I don’t use pumpkin pie spice. I use only cinnamon, nutmeg, and ginger. I sprinkled those spices on top of this martini. It’s so freakin good. I wonder which has more calories? This martini or a slice of pumpkin pie?
Pumpkin pie martini
(serves 1)
2 oz vanilla vodka
1/2 oz coffee liqueur
1/2 oz irish cream
2 teaspoons pumpkin puree
2 oz almond milk original (or milk of your choice)
In a cocktail shaker with ice, combine all of the ingredients and shake vigorously. (This helps to combine the pumpkin puree). Strain into a martini glass and garnish with a sprinkle of pumpkin pie spice or cinnamon, nutmeg, and ginger.

2 oz pumpkin pie vodka
2 oz cinnamon cream rum
2 oz almond milk original (or milk of your choice)
Combine all ingredients in a shaker with ice. Strain into a martini glass and garnish with a sprinkle of cinnamon, nutmeg, and ginger.
Drink your pie this Thanksgiving!
