sunday suppers- Swiss chicken casserole

Tonight’s sunday suppers is swiss chicken casserole.  Another super simple easy meal to make. The only problem I could find with this meal is that is doesn’t photograph very well. Now I know that my photography skills still suck and that I need a shitload more practice, but this casserole has no hope for a pretty picture. Sorry casserole, don’t take it personally.

I first made this recipe years ago at a place called The Dinner Pantry. It was a really cool place where you make your own meals from fresh ingredients and then take them home to put in your freezer and you would have several great meals at your fingertips to make whenever you wanted. Usually you would pick 5 meals to make from their monthly menu and then you would schedule a session. When you arrived, there were stations set up with all of the ingredients and the recipe and you simply followed along and moved from station to station. It was really quite awesome but kind of pricey. But it seemed well worth it for anyone that didn’t really cook homemade meals or for people that didn’t have time to shop and prep and cook. That wasn’t the case for myself but it was fun to go with my sister and my friends. A little social time for us plus trying out new recipes and leaving with some great meals. We were all kind of sad when they closed.

The recipe I used today came from Elaine who turned 40. I’m not sure if it was the exact recipe from the Dinner Pantry but it’s the one she always uses. And she makes it frequently. I’ve seen similar recipes to this one but it uses cream of chicken(or mushroom or celery) soup instead of gravy.

6 boneless skinless chicken breasts
6 slices swiss cheese
1 box stove top stuffing prepared according to pkg directions
1 jar chicken gravy
Cover the bottom of a large baking dish with the chicken breasts. Spread the jar of gravy over top. Layer the swiss cheese over the top of the chicken and gravy. Spread the stuffing on top. Cover the dish with foil and place in a preheated 350 degree oven for 1-1 1/2 hours or until chicken is no longer pink inside.
