Tonight’s sunday suppers is brought to you by The Best Garlic Bread in the Universe. Seriously, that’s what the recipe is called. I found it in my Three Rivers Renaissance Cookbook IV. It is one of my most popular recipes that I used to make all the time and then kind of forgot about for a few years. It popped back into my head when a friend of Mikey’s who works at a bakery gave him a giant loaf of homemade bread. I couldn’t decide what I wanted to make with it. My first thought was thick slices of French toast. But then I remembered the garlic bread and I had to search out the cookbook. Luckily I found it and it only has 6 ingredients and is so easy to make.
Mix the ingredients in a bowl and spread on the bread that’s been cut in half lengthwise.
My nephew just loved this garlic bread and my sister got the recipe from me and she would make it for him all the time.
Place the bread halves on a cookie sheet and bake.
I threw some chicken parmesan together first and made the garlic bread while the chicken was baking. Then the last 15 minutes I put the garlic bread into the oven and made some thin spaghetti. And sunday supper was done!
The Best Garlic Bread in the Universe
1 cup (2 sticks) butter, softened
1 cup freshly grated parmesan cheese
1/2 cup mayonnaise
5 cloves garlic, minced
3 Tbsp. finely chopped parsley
1/2 tsp oregano
1 large loaf Italian or French bread, cut in half lengthwise
Preheat oven to 375 degrees
Mix the first 6 ingredients in a bowl and spread on bread. Place bread halves on cookie sheet. Bake for 15 minutes, until melted and bubbly.
