Redberry cherry chocolate cream cheese pie
I made this pie for sunday suppers Valentine’s edition. I mean who needs real food when you can have chocolate. And raspberries. And cherries. And cream cheese. And sugar. And pie! The only thing to make it better is wine. Oh wait, I have that too!!
This pie is based on a few different things. I make a blue ribbon redberry cherry pie that is a hit especially with my sister’s family. Then there is a raspberry chocolate cream pie from a local berry farm/winery that is really bomb. I found a similar recipe on the internet, so I decided to combine the two and came up with this redberry cherry chocolate cream cheese pie. Can I get a hell yeah!
The redberry is just red raspberries. I will give some props to my sister who came up with the redberry cherry pie and I just perfected it. It’s the tart red raspberries combined with the sweet cherries that really make this combination work. And now I’ve combined it with chocolate and a cream cheese mixture and have completely taken it over the top.
So I also made a heart shaped apple pie for my boyfriend for part of his Valentine’s present. It’s another blue ribbon winner. My very most popular pie that I make. We are going to have a slice with coffee ice cream. Can you say complete sugar overload-gain 5lbs in one day happy valentine’s day??
My boyfriend made me breakfast in bed. Fresh squeezed orange juice, coffee, scrambled eggs, turkey bacon, and pancakes. It was heavenly awesome! I for real ate it in bed which I’m not sure I’ve ever done before. That was my present plus scratch off lottery tickets which I always love love love. So I ate my wonderful breakfast and then I get to stuff my face with all the pie. Sounds like a good day to me!
Redberry cherry chocolate cream cheese pie
Pie dough for single crust 9″ pie
12oz fresh or frozen red raspberries(if frozen, thawed)
21 oz can cherry pie filling(drained of filling, reserve cherries-do not rinse)
2 TBL cornstarch
1/2 cup sugar
1 8oz package cream cheese, softened
1/3 cup sugar
1/2 tsp vanilla extract
1/2 cup whipped topping, softened
2 oz semisweet chocolate
3 Tbl butter
1.Place pie dough in pie pan and prick bottom and sides with a fork. Place in preheated 400 degree oven until lightly golden. Let cool completely.
2.In a saucepan combine raspberries, cherries, cornstarch and sugar. Cook over medium heat until mixture starts to boil stirring constantly. Remove from heat and let cool. Spread into shell and refrigerate.
3.In a bowl, beat cream cheese, sugar, and vanilla until fluffy. Fold in whipped topping. Carefully spread over berry mixture and refrigerate 1 hour.
4.In a microwave, melt chocolate and butter. Stir until smooth. Let cool 5 minutes and pour over filling. Refrigerate at least 2 hours. Store in refrigerator.
