Mouth watering meatloaf stuffed with ooey gooey pepper jack cheese and topped with a tangy barbecue sauce is comfort food kicked up a notch. I pair this with crispy seasoned baby potatoes made in the air fryer, This Bbq pepper jack meatloaf with air fryer roasted potatoes makes a delicious meal I love to serve for Sunday suppers.
I have been making this meatloaf for years and years. Originally I found the recipe in a Taste of Home magazine. I changed it up a bit by using lean ground beef and lean ground turkey and I added the barbecue sauce on the top. It’s so good and it’s one of my favorite go to recipes that makes great leftovers too.
Ingredients for BBQ pepperjack meatloaf
An egg, seasoned breadcrumbs, salt, pepper, ground turkey, and ground beef are all combined to make the meatloaf.

About 3/4 of the mixture is placed in a meatloaf pan. I press the mixture onto the bottom and sides of the pan making sort of like a well in the middle.
Next, I add the shredded pepper jack cheese.
Then I add the remaining 1/4 of the mixture to the top. I press my finger to seal the meat and to keep the barbecue sauce from running over the edge.
I cover the top of the meatloaf with a bottled barbecue sauce. My favorite is Stubbs.
Bake in a 400 degree oven for approximately 1 hour and let cool before slicing.
For the air fryer roasted potatoes, I like to use a mixture of red and white baby potatoes. I cut them in half and season them with garlic powder, onion powder, salt, pepper, smoked paprika, and chili powder and toss them with olive oil.
Lastly, they go into the air fryer at 400 degrees for about 20 minutes until tender and crispy.
Bbq pepper jack meatloaf with air fryer roasted poatoes
Ingredients
- 1 egg
- 1 cup seasoned breadcrumbs
- 1 pound lean ground beef
- 1 pound lean ground turkey
- pinch salt and pepper
- 1 1/2 cups shredded pepper jack cheese
- 1/2 cup barbecue sauce
- 24 oz bag of baby mixed potatoes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1 pinch pepper
- 1 tsp olive oil
Instructions
- Preheat oven to 400 degreesIn a large bowl, combine the egg, breadcrumbs, ground turkey, ground beef, salt, and pepper. Mix well. Press 3/4 of mixture onto the bottom and halfway up the sides of a greased 8x4x2 inch loaf pan. Sprinkle the shredded cheese over the meat. Pat remaining mixture over cheese. Pour barbecue sauce over the top.Bake, uncovered for 1 hour or until meat thermometer reads 165 degrees. Let stand for 15 minutes (or longer) before slicing.While the meatloaf is baking, cut baby potatoes in half and place in a medium size bowl. Sprinkle garlic powder, onion powder, chili powder, smoked paprika, salt and pepper over potatoes and drizzle with olive oil and mix well. Place potatoes in a 400 degree air fryer for 18-20 minutes. Shake potatoes halfway through.
I like to serve my Bbq pepper jack meatloaf and air fryer roasted potatoes with a side of green beans.
