Bbq pepper jack meatloaf with air fryer roasted poatoes

Ingredients

  • 1 egg
  • 1 cup seasoned breadcrumbs
  • 1 pound lean ground beef
  • 1 pound lean ground turkey
  • pinch salt and pepper
  • 1 1/2 cups shredded pepper jack cheese
  • 1/2 cup barbecue sauce
  • 24 oz bag of baby mixed potatoes
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1 pinch pepper
  • 1 tsp olive oil

Instructions

  • Preheat oven to 400 degrees
    In a large bowl, combine the egg, breadcrumbs, ground turkey, ground beef, salt, and pepper. Mix well. Press 3/4 of mixture onto the bottom and halfway up the sides of a greased 8x4x2 inch loaf pan. Sprinkle the shredded cheese over the meat. Pat remaining mixture over cheese. Pour barbecue sauce over the top.
    Bake, uncovered for 1 hour or until meat thermometer reads 165 degrees. Let stand for 15 minutes (or longer) before slicing.
    While the meatloaf is baking, cut baby potatoes in half and place in a medium size bowl. Sprinkle garlic powder, onion powder, chili powder, smoked paprika, salt and pepper over potatoes and drizzle with olive oil and mix well. Place potatoes in a 400 degree air fryer for 18-20 minutes. Shake potatoes halfway through.
