Creamy and coconutty with a shredded coconut rim, this coconut cream pie martini is the perfect sipping drink.
Did you know I’m an award winning pie baker? I won several blue ribbons at my local county fair years ago. Subsequently, I also got to enter my blue ribbon apple pie in the Pennsylvania State Farm Show where I placed in the top 25 out of 60+ pies. Markedly, I sold my pies during the holidays and even at a bake sale. One year I sold 140 pies at Thanksgiving! It was insane.
Now, coconut cream pies were not on my list of pies I sold until one year at Easter time I had a request for a coconut cream pie from my friend who helped facilitate the selling of my pies. So of course I had to make one. But, I had never made one before. I actually made 2 different kinds and had a taste test. The only requirement for the pie was that they didn’t want the meringue or any whipped topping on it. They both turned out good but I’m still searching for the perfect recipe. And instead, I found the simplest and tastiest recipe for a martini not a pie!
Ingredients for coconut cream pie martini
Whipped vodka
Coconut rum
Half and half- or milk of your choice. For an extra kick, use coconut milk
Shredded coconut
That’s it! Very simple, very strong, and not at all sweet. Just a creamy coconut kick.
Recipe
Coconut cream pie martini
(serves 1)
2 ounces whipped vodka
1 ounce coconut rum
1/2 ounce half and half, or milk of your choice
1 Tablespoon shredded coconut to rim the glass
To rim the glass, place the shredded coconut on a plate. Rub a lemon slice around the rim of the glass (or dip it in milk). Then dip the rim in the coconut. Set aside
In a cocktail shaker with ice, add whipped vodka, coconut rum and half and half. Shake well. Pour into coconut rimmed glass.
