On a side note, I’m doing double duty for this cocktail. I wanted a “green” drink for St. Patrick’s Day but I wanted something “beachy” that I could also use for summertime. And the temperatures have been in the 70’s this week after an artic chill of a winter so all I wanted was all the summer vibes.

If you’re looking for a creamier version of this drink, 3 years ago I made a Blue Hawaiian. It uses light rum, blue curacao, pineapple juice, lemon juice, and coconut milk.
