This lime in the coconut cocktail combines the sweet taste of coconut rum and the tart taste of lime juice. The drink is sweetened with simple syrup and sweetened condensed milk. Rim the glass with toasted coconut flakes and the whole combination is out of this world.
When you read the title of this blog post, did you automatically sing the song? “She put de lime in de coconut, she drank ’em bot’ up”….. You know the ever popular tropical song by Harry Nilsson from the 1970’s that will get stuck in your head all day long. Yes, that’s what happened to me too.
Ingredients for lime in the coconut cocktail
The alcohol in this drink is coconut rum. I liked to add about 2 1/2 ounces so the drink is fairly strong. Next, I add 1 1/2 ounces of lime juice and I definitely like to use fresh squeezed lime juice. In order to sweeten the drink, I add 1/2 ounce simple syrup and 1 ounce of sweetened condensed milk. This is the first time I ever used sweetened condensed milk in a cocktail recipe. I was intrigued and happy that it really works well. I use sweetened condensed milk in a chocolate chip cheesecake recipe so this reminded me of a key lime pie situation if you get what I’m saying. Now the kicker of the drink comes from the toasted coconut flakes that you use to rim the glass. So good!
Recipe
Lime in the coconut cocktail
(serves 1)
2 1/2 ounces coconut rum
1 1/2 ounces lime juice, fresh squeezed
1 ounce sweetened condensed milk
1/2 ounce simple syrup
1/4 cup toasted coconut flakes (for garnish)
In a cocktail shaker with ice, combine the coconut rum, lime juice, sweetened condensed milk, and simple syrup. Shake well. Pour into a tall glass rimmed with coconut and add more ice if necessary.
Simple syrup- combine 1/2 cup sugar and 1/2 cup water in a small saucepan over medium heat. Stir until sugar is dissolved. Let the mixture come to a simmer for 2-3 minutes. Remove from heat and let cool. Store in an air tight container in the fridge for up to 3 weeks.
Toasted coconut- Take 1/4 cup coconut flakes and put them in a nonstick pan over medium low heat. Continuously stir coconut flakes until they start to brown, about 5 minutes. To rim the glass, use a lime wedge and dip the glass into the toasted coconut.
