Pineapple, rum, and coconut all combine for this creamy, delicious pina colada.
A few weeks ago, I saw on Instagram that it was national pina colada day and I realized that I had never made a one. I mean it’s like a quintessential summertime drink. Or vacation drink. So I gathered up the ingredients and here we are. A classic tropical favorite.
Ingredients for pina colada
Rum- white rum works best in this drink
pineapple juice
cream of coconut or coconut milk
pineapple chunks- can use fresh or frozen
Ice
maraschino cherry and pineapple wedge for garnish
Recipe
The recipe is super simple- combine the rum, pineapple juice, cream of coconut, pineapple chunks, and ice in a blender. Blend until smooth.
This drink can also be made without a blender. Just combine the ingredients(minus the pineapple chunks, instead add an extra ounce of juice) in a shaker with ice and serve over ice. I prefer the frozen version.
Pina colada
(serves 1)
2 ounces white rum
2 ounces pineapple juice
1 1/2 ounces cream of coconut or coconut milk
2 ounces (1/4 cup) pineapple chunks
Ice- approximately 1-2 cups
Maraschino cherry and pineapple wedge for garnish (optional)
Cocktail umbrella for garnish (optional)
