sunday suppers

Tonight’s sunday suppers is brought to you by Averie Cooks. It’s one of my favorite blogs for recipes. And to follow on pinterest. Now you might consider this cheating, but I’m just keeping it real. No sense faking my meals or trying to change the recipe up to make it mine. And of course no copying and pretending it’s mine because that’s illegal. So I found myself searching for some new recipes to make for the week because we were pretty sick and tired of my same old same old meals except for breakfast casserole which has been a staple for a good year and a half(no joke). I like to peruse Pinterest while I’m doing cardio at the gym during commercials of General Hospital. Yes, I know this can be dangerous, but I’m developing a unique talent and I’ll never tell you if I actually do fall off the treadmill anyway haha. So anywho, I came across some recipes on pinterest from Averie Cooks and I decided to try 2 of them and they are winners. Probably going to become the new staples for the week of meals I make on sunday suppers. Oh and I have to share with you that it took me YEARS to find a chocolate chip cookie recipe that I loved and I finally found one last year on Averie Cook’s and I absolutely love love love it so much and so do my friends and family. And especially my boyfriend. Like can’t stop eating them love them. What I found interesting about the chocolate chip cookie recipe is that I have tried using pudding mix in my cookie dough before but it still wasn’t quite right. In my opinion, it’s the ratio of sugar and brown sugar that made the difference to me. Plus the pudding mix. But seriously, my fav chocolate chip cookie recipe ever.
Ok let’s get back to sunday suppers…
thai peanut chicken
I made Averie’s slow cooker thai peanut chicken exactly as she told me to.

And the fact that you make it in a crockpot is awesome. So super simple.

I even recommend the garnishments to make it authentic. Chopped peanuts, cilantro and green onions.

I also made some Ramen noodles to go with it instead of rice. Delicious. Seriously.

The second recipe I made is bbq chicken and sweet potatoes.

The only thing I changed from Averie’s one-pan bbq chicken and roasted sweet potatoes is that I used boneless skinless chicken breasts instead of thighs.
So there you have it my friends.  We chowed down (actually we devoured) these meals all week and I plan on making them again in the very near future because they were so stinking good! You definitely need to try these recipes.  And try the chocolate chip cookie recipe too! And then send me some cookies! Please!
