- In a tall glass, add 5 pieces of strawberries, 5 pieces of rhubarb, 5 mint leaves, 2 oz of strawberry rhubarb simple syrup. and lime juice. Muddle with a muddler or the back of a wooden spoon. Add ice and rum. Stir well. Top with club soda. Garnish with mint leaves, optional
strawberry rhubarb simple syrup
- First, in a small saucepan over medium heat, combine 1/2 cup strawberries, 1/2 cup rhubarb, 1 cup water, and 1 cup of sugar. Stir. Next, bring to a simmer stirring frequently. Let mixture simmer for 10 minutes, stirring often. Remove from heat and strain into an airtight container. Let mixture cool completely. Store in refrigerator for up to 3 weeks.
