a mojito for your monday

 

Why do I feel the need to rhyme?  Frozen Friday now mojito Monday.  I apologize for being annoying.

It’s a blueberry mojito with pineapple mint!

Of course you can use regular mint instead of or if you can’t find pineapple mint.

I still have a lot to use.  That may be a warning to you of future recipes all using pineapple mint.

I once had several blackberry mojitos before getting on a plane to fly to florida all by myself.  It was at a small local airport and I actually wasn’t that afraid to fly it’s just that the mojitos tasted that good.  I can’t even talk about the time I flew to mexico.  One of the worst experiences ever.  I could’ve used a few mojitos.  Actually I could’ve used some medication not mojitos.  Anyway it’s still hard for me to discuss.  So I won’t.  I’ll just talk about mojitos.  I used blueberries in this one because it pairs so nicely with the pineapple mint.  If you can’t have a frozen drink on a hot summer day then I suggest a blueberry mojito.  It’s cool, refreshing, fruity, minty….

blueberry mojito with pineapple mint

2 oz white rum

blueberries (approx 12)

1 lime wedge

few springs of pineapple mint

1/4 tsp sugar

club soda

in a glass muddle blueberries with lime wedge, 4-5 mint leaves, and sugar.  Add ice, rum, and fill with club soda.  Can add a few more blueberries and top with a sprig of mint.
