Not too tart and not too sweet, this strawberry rhubarb mojito is such a refreshing cocktail to enjoy on a hot summer day. Additionally, this drink can easily be made into a delicious mocktail by simply leaving out the rum.
Ingredients
The ingredients in this mojito are fairly simple-
rum- white or clear rum is traditionally used in mojitos
lime juice- an essential ingredient in a mojito
mint leaves- another essential ingredient
club soda- I typically use a no sodium one
fresh strawberries and rhubarb- used in the simple syrup and muddled in the glass
strawberry rhubarb simple syrup- this is the “sugar” part of a mojito and uses the fresh fruit, sugar, and water
Strawberry rhubarb simple syrup recipe
For the simple syrup-
First, in a small saucepan, combine 1/2 cup strawberries, 1/2 cup rhubarb, 1 cup water, and 1 cup of sugar. Stir. Next, bring to a simmer stirring frequently. Let mixture simmer for 10 minutes, stirring often. Lastly, remove from heat and strain into an airtight container. Let mixture cool completely. Store in refrigerator for up to 3 weeks. Also, if needed, you can cut the recipe in half.
Strawberries and rhubarb go together like peanut butter and jelly. It’s such a delicious combination. This simple syrup can be used in other cocktails too- like my strawberry rhubarb bourbon smash, or strawberry rhubarb martini. In another lifetime I used to bake and sale pies. Strawberry rhubarb pie was always a good seller. I had a customer at the bar where I worked who had rhubarb plants in his yard and never knew what to do with them so he always gave me a bunch and I would freeze the rhubarb to put in my pies at Thanksgiving.

Ingredients
- 2 ounces rum
- 2 ounces strawberry rhubarb simple syrup recipe follows
- 1/2 ounce lime juice
- 5 leaves mint plus more for garnish, optional
- club soda
- 1/2 +5 pieces cup chopped fresh strawberries
- 1/2 +5 pieces cup chopped fresh rhubarb
- 1 cup sugar
- 1 cup water
Instructions
- In a tall glass, add 5 pieces of strawberries, 5 pieces of rhubarb, 5 mint leaves, 2 oz of strawberry rhubarb simple syrup. and lime juice. Muddle with a muddler or the back of a wooden spoon. Add ice and rum. Stir well. Top with club soda. Garnish with mint leaves, optional
