sunday suppers

Super Bowl sunday suppers!  For the Big game tonight I made a big crockpot full of ribs.  I’m also having mac n cheese(from a box), cornbread(not from a box), and sweet potato fries(from a bag).  Plus I’m going to make my breakfast casserole, turkey meatballs, and chicken fried rice to have for supper for the week.  I’ll explain the mac n cheese from a box- that’s my favorite kind.  Pathetic I know but I can’t help it.  Powdered cheese just sounds so good right?  Haha! Maybe it’s a kid thing? and while I’ve had a few good “real cheese” mac n cheese I still crave the box kind.  And it has to be shaped macaroni. No elbows.

But let’s talk about these ribs.  The recipe is adapted from this recipe on the blog eatliverun.  Jenna no longer blogs but you can still find all of her recipes on the blog.  I used over 6 pounds of ribs.  I kind of got carried away.  I like a mix of babyback and St.Louis style ribs.  I also made my own rub and I used Stubbs sweet heat BBQ sauce.

So what’s my drink du jour for the Super Bowl?  Beer of course!  And because I have to be different and because I can still find it around my neck of the woods, it’s going to be pumpkin beer! My all time favorite kind.

Crockpot BBQ ribs
3 lbs babyback ribs
3lbs st Louis style ribs
1 bottle Stubbs sweet heat BBQ sauce
1 lg yellow onion, chopped
1 tsp garlic, chopped
2 tsp smoked paprika
2 tsp chili powder
2 tsp garlic powder
2 tsp chipotle powder
1/2 tsp salt
1/2 tsp pepper
In a small bowl combine all 6 spices. Coat ribs with spice mixture, gently rub in. Cut ribs into thirds. Layer ribs in a crockpot layering chopped onion and garlic throughout ribs. Pour BBQ sauce over top and cook on low 7 1/2-8 hours. The ribs should just fall right off the bone!

Just in case you’re wondering, I’m a die hard Steelers fan. Since they didn’t quite (so close, so close) make it this year to the Super Bowl, I’m rooting for Denver.  I’ve always been a Peyton Manning fan.  Second to Ben of course.
