This bourbon peach cobbler is made with a brown sugar peach simple syrup and tastes just like dessert in a glass.
I feel like it’s been awhile since I made a bourbon cocktail. I think my last one was this kentucky mule. I sometimes forget how much I like bourbon. This bourbon peach cobbler is no exception. The peaches compliment the bourbon and the brown sugar simple syrup gives it a caramel flavor. Combined all together, it’s just delicious.
The peach brown sugar simple syrup is super easy. Combine brown sugar, water, and some peach slices in a small pan and simmer over medium low heat until sugar dissolves. Let it cool and strain the peaches (or eat them like I did). Then it’s just bourbon, peach schnapps, simple syrup, and a peach slice (optional).
I actually made this cocktail about 4 years ago but absolutely hated the photos I took of it. Every year since then I’ve meant to make it again but I always put it on the back burner until now. I had some fresh peaches and I knew I just needed to finally make it. You can totally use frozen peaches-thawed, which is actually what I used 4 years ago because it was winter.
Bourbon peach cobbler
(serves 1)
2 1/2 oz bourbon
1 1/2 oz peach schnapps
1 1/2 oz peach brown sugar simple syrup
Combine all ingredients in a shaker with ice. Shake well and pour into a rocks glass. Garnish with a peach slice (optional).

1/2 cup water
1/2 cup brown sugar
3 peach slices (fresh or frozen-thawed)
Place ingredients in a sauce pan and simmer over medium low heat until sugar dissolves. Remove from heat and let cool. Store in an airtight container in the refrigerator for up to 3 weeks.
